Come join the fun at Old Windmill Dairy and learn how to make great cheese. Before you get started there are a few things you should know. 

  

  • Faucets have extremely hot water -160 F degrees. Please turn on the cold water when using hot water. The hot water is required to sanitize equipment.
  • Bring clothes that you do not mind getting dirty or even torn as this is a working farm. Sometimes the goats like to nibble on jackets.
  • Hand washing is essential while working with cheese and working on the farm.
  • When you arrive you are expected to wash your hands prior to petting the goats and before leaving the farm. We have a sink in the red barn for washing your hands.
  • Please let us know if you have been visiting other farms or animals. We have a special cleanser for shoes to reduce bacteria and viral transmission.
  • Goats and other animals are susceptible to various viruses and bacteria and can become sick. To reduce this risk we all must wash our hands and shoes.
  • The OWD is a non smoking environment. Please do not smoke while on the farm.
  • We use stainless steel heavy equipment. This equipment can be very heavy and dangerous to work around.
  • In our basic classes we teach the process of making cheese and we stretch Mozzarella.
  • In each class we will start from the beginning and discuss; culture, renneting, lactic acid cheeses, clean brake, curding, draining whey and salting techniques.
  • Please bring a cooler for your cheese purchases.
  • Please do not bring your pets as our working dogs perceive pets as a threat to the animals on the farm.

  

  

  

  

  

2011 Old Windmill Dairy Cheese Class

Spending Sunday afternoon on a farm can be fun filled and relaxing. Our cheese making classes are an excellent way to learn more about our dairy and how to make cheese at home.

Directions to the farm are emailed 1-2 days prior to the class day as a reminder of the upcoming event. Please check your email.

Farm Cheese Classes Include:

Please allow 3 hours for the cheese class, sometimes we run over. During the class, we review terminology that applies to cheese making, in an open discussion format.  Next we review the different styles and types of cheese.

  

If you are a hands on person don't worry. The next few steps are for you:

  • Innoculating the milk
  • Curding the cheese
  • Hooping Cheese
  • Draining Cheese
  • Stretching Mozzarella

Ice Cream, Butter and Yogurt Making

If you are a hands on kind of person and want to have fun on the farm, this class is for you. Everyone will have a chance to churn butter. We will all go through the process of making and enjoying farm fresh icecream. Lastly we will discuss and set up a batch of yogurt. The yogurt process will be prestaged so you can experience the final product.  Look for this class to be scheduled in the Spring and Summer of 2012 at the farm and in Las Cruces.
